“I believe that this place, being an Asian-based commercial area, is very conducive to leading this business to success,”
After considering various cities and states, Yunchul Bae was convinced that Houston’s Southwest district offered the perfect balance of opportunity and demand.
“The moment I saw this location, I thought that if I opened a Korean restaurant here, the potential for success would be very high.”
But What is a Korean Pocha?
For those unfamiliar with the concept, a Korean Pocha (short for pojangmacha) is a unique establishment that combines the best elements of Korean street food culture with a lively bar atmosphere.
Traditionally, pojangmacha is referred to as small tented street food stalls in South Korea. However, the concept has evolved, and modern pochas like Soju Blues offer a more upscale, indoor experience while maintaining the casual, vibrant atmosphere of their street food roots.

With a decade of experience as a Korean cuisine chef at the Samsung-affiliated Shilla Hotel, followed by over five years at a hotel in Waikiki, Hawaii, and more than three years at a Korean restaurant in Las Vegas, diners can expect nothing short of culinary excellence.

One unique aspect of Soju Blues is its namesake drink – soju. Often referred to as “Korean vodka,” soju is a clear, distilled alcohol integral to Korean drinking culture. Traditionally made from rice, modern soju can also be made from other starches like potatoes or barley.
Yunchul Bae explains the inspiration behind the name “Soju Blues” with a smile:
“It’s simple – drink a lot of Soju and Sing!”

Soju Blues did not come to fruition by Bae’s efforts alone. During an interview, Bae expressed immense gratitude for those who made the creation of Soju Blues possible. He stated: “When I was creating this restaurant, I had to make numerous decisions. Each time, I sought advice and asked for opinions from the people around me. They thoughtfully considered my concerns and gave me sincere advice. This restaurant was not created by me alone; it was made possible with a lot of help from those around me.”
Future Plans and Community Engagement
Soju Blues had a soft opening recently and is gearing up for an upcoming grand opening. The establishment is already planning special events to attract and engage with the local community. A Ladies’ Night every Wednesday is in the works, along with various other promotions.
